A proud-looking poultry with a pearly comb and a cylindrical body, the Alsace hen is a mixed breed (meat and eggs) of medium size: the rooster weighs 2,5 kg, the hen 1,8 kg. It is a rustic gallinace well adapted to the sometimes harsh environment of north-eastern France. Living in our region since time immemorial, the breed was subject to more rigorous selection from the end of the 19th century, when its official standard was drawn up. The golden age of the Alsace hen lasted until the 1930s. The breed then experienced a constant decline due to Anglo-American varieties and then hybrid chickens selected for their productivity.
This hen has strong similarities with its German neighbor: the Rhine hen or Rheinländer.
